Porchetta, Rapini and Smashed Potatoes
- Tock's Porchetta
- Potatoes of choice
- Rapini
- Garlic
- Butter
- Salt and Pepper
Cooking Instructions
- Pre-heat oven to 375F
- Boil potatoes to 90% done
- Smash potatoes add EVOO and S&P
- Cook potatoes for 30-45 mins
- Put Porchetta into oven for last 5 mins
- Sautee rapini with garlic, butter and S&P
